cookies

I used to make these cookies years ago.  I made them today because I did not have any butter. Butter costs more money and is a bad fat, tasty , but BAD.

These cookies are made with canola oil,  which is a healthy oil.  It has the calories, but not the bad fat.
I made chocolate chip cookies, but the recipe was a cinnamon raisin recipe.  You know me, I seldom use a recipe let alone follow it correctly.

Canola oil Cookies
dry ingredients:  1c. flour, 3 c. quick oats, 1 tsp. soda, 1/2 tsp. salt (you may want to add more salt because oil does not have salt like butter ), 1 tsp.cinnamon (if using raisins),1/2 c. raisins, or 1/2 c.chocolate chips
wet ingredients:  1/2 c. oil , 2 eggs, 1 tsp. vanilla, 1/2 c. sugar, 1/2 c. brown sugar (cream well),  combine together all ingredients.  Bake at 350 degrees for 10 minutes. Makes at least 24 good sized cookies.
The cookie dough has a different consistency,  I did a test cookie first, to see if more flour was needed.  The dough was fine, but the cookie stuck a bit to the pan, so I did a quick touch of cooking spray where the cookies would be on the pan.

  Aubrey really liked them.  Kendal will be so happy to know that I will probably make this recipe a bit more.  I love the 3c. of oatmeal, 1/2 c. of  fat and only 1 cup of total sweetener.  The Cowboy Cookie recipe we have been using lately has 1 cup fat and 2 c. sugar--but it is yummy!
Oatmeal Cinnamon Raisin Cookies are my favorite cookie, but not many others in the family feel the same, but maybe I will make 1/2 a batch sometime.

Friday we went to Arco, ID and the Lost River Valley to Aunt Mary's husband, (Uncle Brooks Buxton) funeral.  Dad was asked to sing The Test.  Grandma King tried to come, but she had a very bad cold, with a cough.  Uncle Brent went with us.

winter is thawing

Kendal took my advice to ask Mechelle to Prom with fresh flowers.  He asked her in spanish and tied the message strips to the flowers.

The yard can be seen again.  I am creating visions of the flowers in my head.  I planted tulips near the flag pole last fall. 

This is a very common perrenial around here.  I gets very tall. 

The chives, from a planter Chelsea gave me from Olympia, are feeling the change.

James loved looking outside.  He would watch Kendal and Aubrey leave for school and strain to see the last sight of the truck leaving the driveway.

more snow

Dad was very thrilled when he was able to use the Banks Blazer to clear snow when the big bosses were out of town.

 

Chelsea and James saw plenty of snow when they were here.  Because of my bad judgment James experienced being face down in the snow.  Poor little guy, he rolled off  the sled.

Chelsea and James are visiting Utah and Idaho.  They were sick the first few days, but are now feeling much better.

The wood floors are slippery.  We found these slippers that are helping to reduce the falls and slips. Plus they keep his feet warm.

James hair is long.  But, very cute.  I don't have clippers, so we got his hair cut at a Salon and it made James very sad.  But, he did survive the experience.

forgot how much we like crepes

I have always enjoyed adding a little something to the special days.  Kendal  works tonight so the time had to be breakfast.  Curtis and Courtney introduced us to crepes a few years ago and I have not made them in quite a while.  I don't have a proper pan so they are not very round, but they still taste yummy.  We put the last of the frozen raspberries on the crepes. 

Kendal,  very recently, made crepes in his food and nutrition class. He helped me make the last few crepes. 

This tie of dads always gets a fun response from people.  David King gave it to dad years ago because they share the same birthday.
